Ingredients
- 1 tablespoon butter
- 1 small onion, chopped
- 4 slices turkey bacon, diced
- One 10 oz pkg frozen chopped broccoli, cooked, drained
- 4 large eggs
- 1/2 cup ricotta
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon ground nutmeg
- 1 1/2 cups grated cheddar

Preheat oven to 350 degrees and spray a 9 inch pie plate with nonstick cooking spray. Melt the butter in a frying pan and saute the onion and bacon over medium high heat until golden, about 6 minutes. Add broccoli and cook until mixture is tender, about 6 minutes longer. Set aside to cool.

Beat eggs, ricotta, salt, pepper, and nutmeg in large bowl. Fold in cheddar and cooled vegetables. Pour filling into prepared pan and bake until knife inserted near center comes out clean, about 40-45 minutes. Cool slightly before cutting.
