“Sarah’s Favorite Chicken-N-Chesse Enchiladas”

Ingredients

  • 1 med. onion, chopped
  • 2 tbsp. butter
  • 1 1/2 cup chicken, shredded cooked
  • 1 (12 oz.) jar picante sauce, divided
  • 1 (3 oz.) pkg. cream cheese, cubed
  • 1 tsp. cumin (more or less)
  • 2 cups (8 oz.) sharp cheddar cheese, shredded and divided
  • 8 flour tortillas (6 inch)

Directions

  1. Heat oven to 350 degrees

  2. Cook and stir onion in butter in large skillet until tender.

  3. Stir in chicken, 1/4 cup picante sauce, cream cheese and cumin: cook until thoroughly heated.

  4. Stir in 1 cup shredded cheese.

  5. Spoon about 1/3 cup chicken mixture in center of each tortilla: roll up.

  6. Place seam side down in 12×7-inch baking dish.

  7. Top with remaining picante sauce and cheese.

  8. Bake 15 minutes.
