Audrey’s French Crepes
(from Jessica Leigh’s recipe box)
Years ago, my family housed a French exchange student for a few weeks. While we taught her how to be an Italian/Irish/German/American/New Yorker, she taught us how to make incredible French cuisine!

Ingredients
- 2 cups of flour
- 4 eggs
- 1/2 cup of sugar
- 2 or 3 cups of milk
- a few drops of vanilla
- a pinch of salt
- 3 tbsp of butter
Directions
-
Beat eggs together in a big bowl with 1 cup of flour, sugar, salt, and 2 of the eggs.
-
Split the yolk and the whites of the other 2 eggs.
-
Beat the whites in another bowl. Once it looks like meringue (white foam) and sort of stiff, put it on the other mixture.
-
Try to avoid lumps of flour (so use a mixer)
-
Little by little, put the milk and flour left over into the mix as well as the melted butter.
-
Now add vanilla.
-
Butter the frying pan and pour a bit of the mix in, like you are making really thin pancakes!
-
Fill your crepes with everything and anything you want (I love fruit crepes – fresh or compote, with Nutella, applesauce, cinnamon, chocolate sauce, caramel)
