Audrey’s French Crepes

Years ago, my family housed a French exchange student for a few weeks. While we taught her how to be an Italian/Irish/German/American/New Yorker, she taught us how to make incredible French cuisine!

Ingredients

  • 2 cups of flour
  • 4 eggs
  • 1/2 cup of sugar
  • 2 or 3 cups of milk
  • a few drops of vanilla
  • a pinch of salt
  • 3 tbsp of butter

Directions

  1. Beat eggs together in a big bowl with 1 cup of flour, sugar, salt, and 2 of the eggs.

  2. Split the yolk and the whites of the other 2 eggs.

  3. Beat the whites in another bowl. Once it looks like meringue (white foam) and sort of stiff, put it on the other mixture.

  4. Try to avoid lumps of flour (so use a mixer)

  5. Little by little, put the milk and flour left over into the mix as well as the melted butter.

  6. Now add vanilla.

  7. Butter the frying pan and pour a bit of the mix in, like you are making really thin pancakes!

  8. Fill your crepes with everything and anything you want (I love fruit crepes – fresh or compote, with Nutella, applesauce, cinnamon, chocolate sauce, caramel)
