Gingerbread

Cook time: 15 minutes

Ingredients

  • 1 1/4 Tb golden syrup
  • 60 g butter
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 1/4 cups plain flour
  • 1/2 tsp bicarb of soda
  • 1 1/2 tsp ground ginger

Directions

  1. Pour golden syrup into small heatproof jug

  2. Stand jug in dish of hot water until syrup soft

  3. Cream butter+sugar till light and fluffy

  4. Add egg yolk, beat well

  5. Slowly add sifted dry ingredients and warmed syrup, mix well

  6. Knead lightly

  7. Roll out onto board and cut into shapes

  8. Put onto oven tray

  9. Bake until golden brown at 190C
