Pasta Fagioli

Serves 4 people

Ingredients

  • 2 cups white beans and juice
  • 3 cups tortellini
  • 2 cups diced tomatoes with juice
  • 2 cups marinara sauce
  • 1 cup diced onion
  • 1/4 cup diced celery
  • 1 tsp minced garlic
  • 1/2 tsp rosemary
  • 1/2 tsp oregano
  • 1 tsp salt, optional

Directions

  1. In a bag, add the above ingredients.

  2. Seal the bag and put in the freezer.

  3. To cook: add bag contents and 4 cups of water in a large soup pot. Bring to a boil on high heat. Turn to low, cover pan and simmer gently 25 minutes, stirring halfway through.

  4. Pour in bowls and top with shredded parmesan cheese
