SOUP-Sancocho

Ingredients

  • 2 large spanish onions
  • 2 whole heads of garlic
  • 2 bay leaves
  • 1 pack of sazon
  • 1lb of beef chuck cut into cubes
  • 1 cup sofrito
  • 4 culantro leaves or 1/2 cup cilantro
  • 1 medium cubanelle pepper quartered
  • Kosher salt
  • 1lb name or purple potatoes, peeled, quartered
  • 1lb yucca or yukon gold potatoes, peeled, halved lengthwise
  • 1lb yautia or new potatoes, peeled, halved lengthwise
  • Chicken or beef broth
  • Chopped fresh cilantro

Directions

  1. Sautee onions, garlic, bay leaves in oil

  2. Add beef chuck and brown

  3. Add enough broth to cover and add sazon, sofrito, culantro, cubanelle

  4. Add salt to taste and cook for 45 mins

  5. Add name, yucca and yautia and cook until tender (15-20mins), add additional broth to cover

  6. Taste and add salt to taste

  7. Sprinkle with fresh cilantro
