CHICKEN-Chicharrones De Pollo

Ingredients

  • 1 1/2 lbs boneless, sknless chicken thighs, cut into pinkey-size strips
  • 2 tsp dry rub
  • 1 1/2 tbs cider vinegar
  • Vegetable or canola oil
  • All-purpose flour

Directions

  1. Toss the chicken with dry rub and vinegar until coated

  2. Marinate at room temp up to 30mins or in fridge 1 day

  3. Drain chicken

  4. Pour enough oil into deep pot to fill about 3 inches ove medium heat

  5. Dredge chicken in flour unitl coated

  6. Cook until deep golden brown (~4 mins)
