Broccoli Soup

Serves 5 people

Ingredients

  • 2 tps margarine
  • 1/2 cup chopped onion
  • 3/4 cup chopped celery
  • 2 10oz packages frozen broccoli
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 lb velveeta
  • salt & pepper to taste

Directions

  1. Heat margarine in sauce pan. Saute onion and celery. Add broccoli and broth. Quickly bring to a boil. Cover and simmer until broccoli is tender. Puree in blender. In pot, stir together the broccoli puree, milk and cheese. Add salt and pepper to taste and then heat.
