Baked Potato Salad

Serves 16 people

Ingredients

  • 4-5 lbs. potatoes (white if baking, red if boiling)
  • 1 C Vidalia Onion, or other sweet onion, chopped
  • 1 C Mayonnaise (light or canola oil)
  • 1 C Sour Cream (light)
  • 8 oz Cream Cheese, softened (light)
  • 1 1/2 T Dill, can use 2 T
  • 1 or 2 t Beau Monde seasoning
  • 1 t salt
  • 1 or 2 T fresh parsley, chopped

Directions

  1. Baking: Wash and Bake potatoes and let cool, cut into bite size pieces

  2. Boiling: wash, cut in pieces, and boil to just tender, rinse in cold water.

  3. Mix onion, mayo, sour cream, cream cheese

  4. Add seasonings to dressing, saving out some parsley; check to taste -does it need more Beau Monde or salt?

  5. Fold potatoes into dressing, sprinkle remaining parsley and chill for couple of hours.

  6. optional: sprinkle with crumbled bacon
