TWICE BAKED SWEET POTATOES AND APPLES

Ingredients
- 6 med. sweet potatoes
- 1/4 c. brown sugar, firmly packed
- 1/2 c. butter
- 1/2 tsp. grated orange peel
- 1 c. apple, chopped
- 1/4 c. pecans, chopped
Directions

Bake sweet potatoes.

Cut lengthwise; scoop out filling.

Leave shell if you want to refill as a “twice baked.”

Mix in bowl potatoes and all ingredients except apples and pecans.

Beat at medium speed until lumps are gone. By hand, stir in apples and pecans.

Refill shells with mixture.

Bake for 15 to 20 minutes at 375 degrees.

You can place mixture in casserole instead of potatoes shells if you choose.
