this meal is so simple, we often make it when we’re under sail. the secret is in the homemade tortillas – so good you could eat them plain, and a little beans, cheese, and guacamole is all they need. These are essentially homemade white flour tortillas

- white flour
- butter

for the tortillas:

combine a few cups of flour (white or whole wheat, quantity depends on how many people you’re feeding) with a stick of butter, mashing the butter with a fork until it is worked into little clumps throughout the flour. then add water little at a time and stir mixture until it forms a soft dough. break of a little ball (about the size of a golf ball) and roll it out on a floured surface, adding flour if it’s too sticky. Fry the tortilla on a very hot skillet with a very small amount of oil (only on the first one, after that they can be fried dry) until bubbles puff up, then flip it over and cook until light brown.
- serve the tortillas hot, folded in half, and filled with:
- - black refried beans, from a can, heated in a saucepan)
- - guacamole (i make it with mashed avocados, a little garlic, salt, and lime juice)
- - mexican farmers cheese (often called cacique or queso ranchero)
