Barley’s Ale House Pretzels

Divide everything by 4 to make it more manageable.

1 Tbsp. water
1 tsp. yeast
1 oz. butter
3/4 c. beer
1/6 c. brown sugar
2 1/4 to 2 1/2 c. flour
1/4 tsp. garlic powder
1/4 tsp. onion powder

Water and baking soda are the same since you’re boiling the same size pretzels in it.

You can save the dry ingredients as necessary

Ingredients

  • 4 Tbsp. Warm water
  • 4 tsp. dry yeast
  • 4 oz. Butter, melted
  • 3 c. pilsner, warm
  • 2/3 c. brown sugar
  • 9-10 c. flour
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 c. baking soda
  • 4 qt. Water
  • Kosher salt

Directions

  1. Mix warm water and yeast then mix in beer, butter, and brown sugar in a large bowl.

  2. Separately mix flour, garlic powder, and onion powder in a large bowl.

  3. Stir both mixes by slowly mixing in flour.

  4. Knead dough until smooth

  5. Preheat oven to 450 F

  6. Bring water and baking soda to boil

  7. Form golf ball size portions of dough and roll into small batons about the size of a finger

  8. Dunk into boiling water for 30 seconds

  9. Remove from water and bake on greased and salted cookie sheet for 6 minutes
