Potato Pancakes

Serves 6 people
Ingredients
- 4 potatoes
- 1/2 c. milk
- 1/2 c. yogurt, plain (sour cream will do)
- 1 c. butter
- salt
- pepper
- garlic powder
- 1 c. Mozzarella cheese
- 1 1/2 c. flour
- 2 eggs
- Vegetable oil, bacon fat, or shortening
- 3/4 c. flour
Directions

Peel and boil potatoes until soft

Add butter first into potatoes and mash

Add yogurt/sour cream and milk and mash

Add salt, pepper, mozarella, and garlic pepper. Mash again. Leave some lumps.

Mix in egg and 1 1/2 c. flour. Form into golf ball sized balls. Roll into 3/4 flour and set aside.

Flatten them and fry in vegetable oil until browned on each side. Roughly 3-4 minutes each side.

Makes about 20 pancakes

Cool on paper towel to absorb oil
