Potato Pancakes

Ingredients

  • 4 potatoes
  • 1/2 c. milk
  • 1/2 c. yogurt, plain (sour cream will do)
  • 1 c. butter
  • salt
  • pepper
  • garlic powder
  • 1 c. Mozzarella cheese
  • 1 1/2 c. flour
  • 2 eggs
  • Vegetable oil, bacon fat, or shortening
  • 3/4 c. flour

Directions

  1. Peel and boil potatoes until soft

  2. Add butter first into potatoes and mash

  3. Add yogurt/sour cream and milk and mash

  4. Add salt, pepper, mozarella, and garlic pepper. Mash again. Leave some lumps.

  5. Mix in egg and 1 1/2 c. flour. Form into golf ball sized balls. Roll into 3/4 flour and set aside.

  6. Flatten them and fry in vegetable oil until browned on each side. Roughly 3-4 minutes each side.

  7. Makes about 20 pancakes

  8. Cool on paper towel to absorb oil
