Sugar Free Blueberry Coffee Cake

Ingredients

  • 3/4 c. butter melted and cooled
  • 1 c. milk
  • 3 eggs
  • 1 tsp vanilla
  • 1 1/2 c. splenda
  • 2 tsp. baking powder
  • 3 c. flour
  • 1 3/4 c. blueberries
  • 1 1/2 c. malitol brown sugar substitute
  • 2 tsp ground cinnamon
  • 1/2 c. butter softened

Directions

  1. eheat oven to 350. Grease and flour a 9×13 inch baking pan.

  2. In a large bowl stir together the melted butter, vanilla, and 1 1/2 c. splenda. Combine 3 c. flour and baking powder, stir into the wet ingredients until just blended. Fold in the blueberries. Spread evenly in the prepared pan. In a small bowl stir together the brown sugar substitute 3/4 c. flour and cinnamon. Stir in the softened butter with a fork until the mixture is crumbly. Sprinkly over the top of the cake. Bake 35-40 minutes in pre heated oven until tester comes out clean. Best served warm.
