Corinne’s Spinach Cheese Pie

Ingredients

  • 4 eggs
  • 3 oz cream cheese - cut up
  • 1/2 cup shredded extra sharp cheddar cheese (1/2 bar or more)
  • 1/2 cup milk
  • 1/2 cup cooking liquid
  • 1 pkg frozen chopped spinach
  • 12 saltine squares - crushed
  • 3 tbs parmesan cheese
  • 2 tbs dried minced onion
  • 1 tbs dried parsley
  • 1/8 tsp black pepper

Directions

  1. Pre-heat oven to 350 degrees

  2. Cook spinach til well done

  3. Drain completely; reserve 1/2 cup cooking liquid

  4. Combine first five ingredients

  5. Add saltines; let stand few minutes

  6. Add remaining ingredients; mix well

  7. Pour into greased pie plate (large)

  8. Bake at 350 degrees for 45 minutes or until center is set and top is golden brown

  9. Let stand 15 minutes before serving
