Cheeseburger Soup

Ingredients

  • 1/2 lb. ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cups diced celery
  • 1 tsp. dried basil
  • 1 tsp. dried parsley flakes
  • 4 tbsp. butter
  • 3 cups chicken broth
  • 4 cups diced peeled potatoes
  • 1/4 cups all purpose flour
  • 8 ounces processed american cheese
  • 1 1/2 cups milk
  • 3/4 tsp. salt
  • 1/4 to 1/2 tsp. pepper
  • 1/4 cup sour cream

Directions

  1. Brown beef in sauce pan.

  2. In the same pan saute onion, carrots, celery, basil, parsley, in 1 tsp of butter.

  3. Saute veggies 10 minutes or until tender.

  4. Add broth, potatoes and beef and bring to a boil.

  5. Reduce heat and cover and simmer 10-15 minutes.

  6. Meanwhile, in small skillet melt butter, add flour.

  7. Cook and stir 3-5 minutes until bubbly.

  8. Add to soup and bring to a boil.

  9. Cook and stir 2 minutes.

  10. Reduce heat to low

  11. Add cheese, milk, salt and pepper.

  12. Cook and stir until cheese melts.

  13. Remove from heat.

  14. Blend in sour cream.
