Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 jalapenos, seeded and minced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon ground chipotle
- 1/8 teaspoon cayenne pepper
- 14 oz diced or stewed tomatoes, mexican style
- 32 oz black beans, rinsed and drained
- 1 cup corn kernels, fresh or frozen
- 1/3 cup cilantro, chopped fresh
Directions

In a large pot over medium heat warm the oil. Add the onion, bell pepper, jalapeno and garlic. Cook, stirring often, until the vegetables begin to soften (about 5 minutes). Add the spices, tomatoes and beans. Simmer 15 minutes. Stir in the corn and cook for 1 minute. Stir in cilantro and serve.
