Chipotle Black Bean Chili

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 jalapenos, seeded and minced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground chipotle
  • 1/8 teaspoon cayenne pepper
  • 14 oz diced or stewed tomatoes, mexican style
  • 32 oz black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1/3 cup cilantro, chopped fresh

Directions

  1. In a large pot over medium heat warm the oil. Add the onion, bell pepper, jalapeno and garlic. Cook, stirring often, until the vegetables begin to soften (about 5 minutes). Add the spices, tomatoes and beans. Simmer 15 minutes. Stir in the corn and cook for 1 minute. Stir in cilantro and serve.
