Pumpkin Cheesecake

Ingredients

  • 16 oz cream cheese, softened (2pkgs)
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 2 eggs
  • 9 inch graham cracker crust
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon cinnamon
  • pinch ground cloves
  • pinch nutmeg

Directions

  1. Preheat oven 375 degrees.

  2. Combine cream cheese, sugar and vanilla; beat until smooth. Blend in eggs one at time.

  3. Spread one cup of batter onto crust.

  4. Add pumpkin, cinnamon, cloves and nutmeg to remaining batter; stir gently until well blended. Spread over batter in crust.

  5. Bake 35-40 minutes, until center is almost set. Cool, then refrigerate overnight.
