Corn and Black Bean Salad

Ingredients

  • 2-3 cups fresh corn kernels (from about 4 ears corn)
  • 1 tablespoon extra-virgin olive oil
  • 1 head of romaine lettuce, coarsely chopped
  • 1 can black beans, drained and rinsed
  • 1/2 to 1 cup cherry tomatoes, halved
  • 1/4 to 1/2 cup ranch dressing, or other salad dressing of your choice

Directions

  1. Preheat large sauté pan on medium high heat, 2-3 minutes. Sauté corn kernels in the olive oil until tender, about 2-4 minutes. Transfer corn to large bowl.

  2. Combine remaining ingredients – black beans, lettuce, tomatoes – and toss with salad dressing, adding more if needed. Serve.
