Cherry Limeade

Ingredients

  • 1 (16-ounce) bag of frozen dark sweet pitted cherries
  • 1/2 cup fresh lime juice (from about 7 limes)
  • zest of 1/2 lime
  • 1/2 cup honey
  • 6 cups water

Directions

  1. An 11-cup food processor works best for making this drink. If the food processor is small, puree in smaller batches.

  2. Place 1 cup cherries, 1/4 cup lime juice, 1/4 cup honey and 1 cup water in a food processor. (I highly, highly recommend wrapping a towel around the top of the food processor before hitting start and keeping it there for about 10 seconds or until the mixture settles a little.)

  3. Puree the mixture for a minimum of one minute. Pour through a fine mesh strainer into a bowl or wide mouth pitcher. Move a spoon back and forth across the bottom of the strainer to keep the pulp away from the bottom and speed up the straining process.

  4. Place the remainder of the cherries, the remaining 1/4 cup lime juice and 1/4 honey and 1 cup water in the food processor and puree again for one minute. Strain into the bowl or pitcher.

  5. Add the lime zest and four more cups of water. Stir well and chill very well before serving. This drink tastes best cold. Adding ice will dilute the drink so it’s best to give it a couple of hours in the fridge.
