Ingredients
- 1/2 c. chopped onion
- 1 celery stalk chopped finely
- 2 tbs veg oil
- 4 c. chic broth
- 1/2 tsp dry thyme
- 1 bay leaf
- 1/4 c. Madeira wine
Directions

Cook 1st 4 ingriedients in oil over high heat until golden brown stiring frequently. Add broth thyme & bay leaf, bring to a boil. Reduce heat, simmer 1 hour, strain. Add enough water to make 4 cups. Add wine. Chop turkey & add to gravy. In saucepan over med high heatstir 1/3 c. of flour into 3 tbs of melted butter. Cook 2 min or until brown stirring constantly. Add to gravy stir constant 1 min or more
