Vegetable Basil Soup

Delicious and great for colds! I usually double or quadruple the recipe and freeze some of the soup.
Source: Got this from a roomie I had 16 years ago.

Cook time: 45 minutes
Serves 3 people

Ingredients
- 3 tbsp butter
- 1 onion, chopped
- 1/2 cup chopped celery
- 1 carrot, sliced
- 1 potato, peeled & diced
- 2 ripe tomatoes, diced
- 4 cups chicken stock
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp dry basil
- 1 tsp oregano
- 3/4 tsp thyme
- 1/2 small head of cauliflower, chopped
- 1/4 lb. fresh green (or yellow) beans, trimmed & halved
- 2 small zucchini, diced
- 1/2 lb. fresh green peas
- Parmesan cheese, grated or shredded
Directions

Melt butter in pot over medium heat.

Add onion, celery & carrot and cook until limp.

Add potato, tomatoes, stock, salt, pepper, basil, oregano, & thyme.

Partly cover and simmer for 20 minutes.

Add cauliflower, green beans & zucchini and simmer for 10 minutes.

Add peas and simmer for 5 minutes.

Ladle into bowls and sprinkle parmesan cheese over each serving.
