Ingredients

  • 2 medium eggplants
  • one lemon juice
  • 1/2 cup tahini
  • 3 crushed garlic cloves
  • 1/2 cup chopped parlsey
  • 1 tsp salt
  • 1/4 scallions (optional)
  • lost of fres peper
  • 1 tbs olive oil

Directions

  1. Prick eggplants and roast on rack in 400 degree oven for 45 minutes

  2. When soft, remove – cool – scoop – mash

  3. combine all but oil and chill

  4. drizzle with oil when served
