Ingredients
- 2 medium eggplants
- one lemon juice
- 1/2 cup tahini
- 3 crushed garlic cloves
- 1/2 cup chopped parlsey
- 1 tsp salt
- 1/4 scallions (optional)
- lost of fres peper
- 1 tbs olive oil
Directions

Prick eggplants and roast on rack in 400 degree oven for 45 minutes

When soft, remove – cool – scoop – mash

combine all but oil and chill

drizzle with oil when served
