Eye of Round

Ingredients
- 4 pounds eye of round roast
- Salt and pepper to taste
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 teaspoons garlic, minced
- 2 Tablespoons butter
- 2 Tablespoons flour
- 1 can (8-ounce) tomato sauce
- 2/3 cups beef broth
- 1 can (3.8-ounce) black olives, sliced and drained
Directions

Slice roast diagonally in ¾ inch slices; sprinkle each slice with salt and pepper.

Sauté onion, bell pepper, and garlic in butter until soft. Blend in flour; add tomato sauce, both and olives.

Bring to almost boiling. Place meat on heavy duty aluminum foil in shallow baking pan.

Pour sauce over; seal foil well, and bake at 350°F for 3 ½ hours.
