Ingredients
- 1 lb. thick spaghetti noodles or linguine
- 6 oz shredded cooked chickn or pork
- 2 oz roasted cashews or peanuts (optional)
- for dressing:
- 4 chopped scallions
- 2 Tbsp chopped cilantro
- 2 tsp garlic-chili sauce
- 2 Tbsp peanut butter
- 2 Tbsp sweet chili sauce
- 3 Tbsp soy sauce
- 2 Tbsp sherry or rice vinegar
- 2 Tbsp sesame oil
- 2 Tbsp chicken broth or water
- Lots of freshly ground pepper

Cook noodles

While noodles are cooking, combine all ingredients for dressing and mix together.

Add noodles, shredded meat, and nuts to dressing, toss to coat.
