Farmhouse Barbecue Muffins

Ingredients

  • 1 tube (10 oz) refrigerated buttermilk biscuits
  • 1 pound ground beef
  • 1/2 cup ketchup
  • 3 T brown sugar
  • 1 T cider vinegar
  • 1/2 t chili powder
  • 1 cup (4 oz) shredded cheddar cheese

Directions

  1. Separate dough into 10 biscuits and flatten into 5-in circles

  2. Press each into the bottom and up the sides of a greased muffin cup and set aside

  3. In a skillet, brown beef and drain

  4. In a small bowl, mix ketchup, brown sugar, vinegar and chili powder and stir until smooth

  5. Add to meat and mix well

  6. Divide meat mixture among biscuit-lined muffin cups, using 1/4 cup for each

  7. Sprinkle with cheese

  8. Bake at 375° for 18-20 minutes or until golden brown

  9. Cool for 5 minutes before removing from tin and serving
