Salmon with Dijon dill sauce

Cook time: 15 minutes
Serves 4 people
Ingredients
- 4 6-oz salmon fillets, skin removed
- 1/2 t salt
- 3 T unsalted butter, cold
- 1 small shallot, finely chopped
- 1/2 cup wine
- 1 T Dijon mustard
- 2 T roughly chopped fresh dill, plus more for garneshing
- 1/8 t black pepper
- 1 cucumber, thinly sliced (optional)
Directions

Set broiler on high

Place salmon on a foil lines broiler pan and season with 1/4 t of the salt

Broil until salmon is the same color throughout and flakes easily, 7-10 minutes

Meanwhile, in a medium saucepan, over medium-high heat, heat the oil and 1 T of butter until it melts

Add shallot and cook until softened, about 1 minute

Add the wine and cook until reduced by half, about 3 minutes

Reduce heat to low and whisk in mustard, dill, pepper and remaining salt

Remove from heat

Cut remaining butter into pieces, add to sauce and whisk until incorporated

Place the salmon on individual plates, spoon sauce over top and sprinkle with additional dill

Serve with cucumber
