Frogmore Stew

Serves 6 people
Ingredients
- 1-2 gal water
- 1 large onion, chopped roughly
- Juice and thin yellow part only of the peel of 1 small lemon
- 4 bay leaves
- 1/4 cup butter
- 4 tsp. salt
- 4 tbsp Old Bay Seasoning or crab boil
- 1 can beer (optional)
- 3 pounds small new potatoes
- 3 pounds Hillshire Farms smoked sausage cut into 2 inch pieces
- 12 small ears fresh or frozen corn -
- cut in half
- 3 pounds large fresh shrimp, unpeeled
- Blue crabs, optional or
- king crab legs

Bring water, onion, lemon juice and peel, bay leaves, Old Bay Seasoning, butter and salt to boil in a large stockpot. If using crab boil omit bay leaves. Add beer. Add potatoes and cook for 15 minutes. (Potatoes should be almost tender at this point.) Add corn and cook for another 5 minutes. Add sausage and cook for 5 minutes more. Stir in the shrimp and optional crab and cook just until shrimp turn pink, about 5 minutes. Be careful not to overcook shellfish. It will get rubbery. Drain immediately and serve with lemon pepper mayonnaise, mustard for the sausage and cocktail sauce for the shrimp and, of course, more beer!

Hotness of this dish can be adjusted by adding more Old Bay, or by serving the dish with hot sauce for those who like more heat.
