zesty zucchini quesadillas

Ingredients

  • 2 tablespoons pine nuts
  • 2 tablespoons olive oil
  • 1 zucchini, shredded
  • 1/2 res or yellow bell pepper, finely chopped
  • 1 small red onion, thinnly sliced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/4 cup chopped fresh cilantro
  • salt and pepper
  • 1 large tomato, seeded and chopped
  • juice of one lime
  • 1 tsp chilli powder
  • 4 whole wheat tortillas 8 in
  • 2 cups shred monteray jack cheese 8 oz
