harvest pot roast

Ingredients

  • 1 lrg onion cut into thick slices
  • 2 carrots cut into 1 in pieces
  • 12 oz mushrooms, quartered
  • 4 garlic cloves, minced
  • 1 can diced tomatoes, drained
  • 1 cup ketchup
  • 2 tablespoons dijion mustard
  • 2 tablespoons worcestershire sauce
  • 1 chuck roast 2.5-3 lb
  • salt and pepper
