Ingredients
- Vinaigrette
- 1 t salt
- 1/3 c red wine vinegar
- 1 c olive oil
- 2 T capers
- 2 t anchovy paste
- 2 t parsley
- Salad
- 1 lb green beans
- 2 lbs small potatoes
- 1 head lettuce
- 2 large tomatoes
- 1/2 c olive oil
- 4-6 hard boiled eggs
- 1 can tuna
Directions

Blanch green beans, boil/steam potatoes

While warm, cut potatoes into wedges- mix with 1/4-1/2 c vinaigrette and chill

Prepare rest of salad, add eggs, green beans and potato-vinaigrette mixture
