Ingredients
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, coarsely grated
- 2 celery stalks, chopped
- 3 T olive oil
- 2/3 c red lentils
- 1 14oz can of tomatoes, chopped
- 2 T tomato paste
- 2 c veggie stock
- 1 t dried marjoram
- salt & pepper
Directions

In a large saucepan gently saute the onion, garlic, carrots and celery in the oil for 5 mins, until soft

Add lentils, tomatoes, paste, stock marjoram and seasonings

Bring to boil, then partially cover w/ lid and simmer for 20 mins, until thick and lentils are soft.
