Sicilian Peperonata and Olive Polenta

Ingredients
- polenta roll
- 1 T olive oil
- 1/2 c chopped onion
- 4 large tomatoes, chopped
- 1 T red wine vinegar
- jar of roasted red peppers, chopped
- 1/3 cup Kalamata olives, chopped
- 1/4 c fresh basil, chopped
Directions

Preheat oven to 500. Bake polenta, lightly brushed with oil for 14 mins, flipping them half way through

Heat 2 T oil over medium heat, add onions and saute for 3 minutes.

Add tomatoes and vinegar. Cook until tomatoes soften

Add rest of ingredients, and simmer for 2 mins.

Spoon over polenta and serve hot
