Roasted Lemon Chicken

Ingredients

  • 1 Whole Roasting Chicken
  • 2 Lemons washed and quartered
  • 1-2 Yellow Onions, Sliced
  • 2 tbsp Unsalted Melted Butter
  • Extra Virgin Olive Oil
  • Salt & Pepper

Directions

  1. Preheat your oven to 425ยบ degrees. Slice your onion and toss with olive oil and evenly spread out on the bottom of your roasting pan.

  2. Take the giblets out of the chicken and sprinkle salt and pepper inside the cavity of the chicken. Place the quartered lemons inside the cavity of the chicken as well and place it on top of the onions.

  3. Pat the outside of the chicken dry with a paper towel and brush the melted butter all over the chicken. Sprinkle salt and pepper. Roast for 1-1/2 hours or until juices run clear when you cut between the leg and the thigh.
