Porcupine meatballs

A childhood favorite, made a little lighter

Cook time: 45 minutes
Serves 8 people
Ingredients
- 10 Saltine crackers
- 1/2 cup milk
- 1.5 pounds ground beef (could also use chicken or turkey)
- 1 can Campbellās Tomato Soup
- 1 small onion, sliced
- Dash Worcestershire sauce
- 1/2 cup of white rice
- Salt & pepper to taste
Directions

Soak crackers in milk.

In a separate bowl, season meat with salt, pepper, and Worcestershire sauce.

In a saucepot, boil soup with 1/4 can of water and onion.

Mix crackers, and meat and rice together. Form into meatballs and add to sauce mixture.

Cover and cook for about 45 minutes.
