Canadian Bacon, Egg, and Cheese Sandwich

Ingredients

  • 1/2 tbsp butter
  • 1 egg, cooked over easy
  • Canadian bacon, 1/4 to 1/2 inch thick
  • 1 slice of American cheese
  • White bread, toasted, thick cut
  • salt and pepper to taste, optional

Directions

  1. Begin by warming a large skillet, spraying with just a bit of cooking spray. Cook your slices of Canadian bacon, for approximately 2-3 minutes per side. During this time, melt the butter in a smaller skillet. Carefully crack your egg and cook until the white of the egg firms up a bit, but the center is just lightly loose. Carefully flip over with a spatula, season with a bit of salt and pepper, then lay on the American cheese.

  2. Toast your bread.

  3. Lay a piece of toast down, top with the egg and cheese, and top with the warm Canadian bacon. Top with the other piece of toast. Gently press down, releasing some of the yolk as it is great for dipping. Dig in and enjoy.
