Zesty Zucchini Quesadillas

Ingredients

  • 2 tablespoons pine nuts
  • 1 zucchini, shredded
  • 1/2 red pepper, finely chopped
  • 1 small red onion thinly sliced or 1 handful of diced onion
  • 2 garlic cloves , minced
  • 1 tsp ground cumin
  • 1/4 cup cilantro
  • salt and pepper
  • 1 large tomato diced
  • juice of a lime
  • 4 tortillas 8 inch
  • cheese optional 2 cups montery jack

Directions

  1. toast pine nuts put in bowl to cool.

  2. ~heat pan, put succhini, bell pepper, onion, garlic and cumin. cook for 5 minutes until veg is soft. stir in cilantro and salt and pepper set aside.

  3. ~ in a small bowl combine tomatoes and lime juice.

  4. ~spread 1/4 of mixture over half a tortillasprinkle with pine nuts and cheese. fold tortilla in half

  5. ~ in large skillet med heat cook quesadillas for 5 minutes turning once until cheese is melted

  6. cut them in half top with generous amount of tomato. (this was a little messy so i ended up putting them inside the quesadilla.)
