Ingredients
- 2 tablespoons pine nuts
- 1 zucchini, shredded
- 1/2 red pepper, finely chopped
- 1 small red onion thinly sliced or 1 handful of diced onion
- 2 garlic cloves , minced
- 1 tsp ground cumin
- 1/4 cup cilantro
- salt and pepper
- 1 large tomato diced
- juice of a lime
- 4 tortillas 8 inch
- cheese optional 2 cups montery jack
Directions

toast pine nuts put in bowl to cool.

~heat pan, put succhini, bell pepper, onion, garlic and cumin. cook for 5 minutes until veg is soft. stir in cilantro and salt and pepper set aside.

~ in a small bowl combine tomatoes and lime juice.

~spread 1/4 of mixture over half a tortillasprinkle with pine nuts and cheese. fold tortilla in half

~ in large skillet med heat cook quesadillas for 5 minutes turning once until cheese is melted

cut them in half top with generous amount of tomato. (this was a little messy so i ended up putting them inside the quesadilla.)
