Ingredients
- 2 tablespoons vegetable oil
- 1 lb smoked pork sausage, sliced
- 1 garlic clove, minced
- 1 large onion, chopped
- 1 stalk celery, chopped
- 1 medium green bell pepper, chopped
- 4 cups chicken stock
- 1/4 teaspoon cayenne pepper
- 2 cups hot cooked rice (plain take-out is ok too)
- 1/4 cup chopped fresh parsley leaves
- Kosher salt & freshly ground black pepper
Directions

1) Heat the oil in a large skillet, add sausage, and brown.

2) Stir in garlic, onion, celery, and green pepper. Cook until veggies soften, about 5 minutes.

3) Add chicken broth and cayenne pepper. Salt and pepper to taste.

4) Stir in cooked rice and chopped parsley, and heat through.
