Baked Oatmeal

Ingredients
- 1/2 C Applesauce
- 3/4 C Sugars (brown & white mixed)
- 2 Eggs (may use egg whites)
- 3 C quick-cook oats
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1 C milk
- 1 tsp. vanilla
Directions

Mix together all dry ingredients. The more brown sugar you use, the less white sugar you need, and the less sugar you actually need to use. I usually do a heaping 1/2 C brown sugar plus a dash or so of white.

Stir to combine, and then store in an airtight container until morning (you can mix it up in the morning, but I find it easier to get the dry ingredients ready the night before).

In the morning, mix together eggs (lightly beaten), applesauce and vanilla. I use 1 egg, and 1-2 egg whites.

Then add the milk and stir to combine.

Add in wet ingredients to the dry ones and stir until moist.

Pour the mixture into a greased 9×9 pan and sprinkle the top with cinnamon, if you wish.

Bake at 350 for 30 minutes, or until golden brown.
