Ingredients
- 1 (3lb) pork loin
- 3 cloves garlic, slivered
- 1/2 c zesty italian dressing
- 1/2 tsp ground cumin
- 1/2 c orange juice
- grated peel & juice from 2 limes
Directions

Pierce meat all over with the tip of a sharp knife. Insert the garlic into the cuts in the meat. Place in a bowl or a large freezer bag.

Mix dressing, cumin, lime peel & juice until well blended; pour over meat. Cover the bowl or seal the bag and refridgerate for 1 hour or up to overnight. Remove the meat from the marinade and discard the marinade. Place the meat in a foil lined roasting pan.

Bake at 350 for 1 1/2 hours. Pour orange juice over the meat. Insert a meat thermometer into the thickest part of the meat. Bake an additional 30 minutes or until internal temperature reaches 160 degrees.

Let stand 10 minutes before slicing to serve.

Serve with juices from the pan.
