Chicken & Rice Casserole

Ingredients

  • 2 c fresh mushrooms, diced
  • 1 c celery, sliced
  • 1 c green pepper, diced
  • 2 tbsp butter
  • 3 c cooked chicken, chopped
  • 1 c long grain rice, uncooked
  • 2 c chicken broth
  • 3/4 c Bicks Savory Tomato Relish
  • 2 tbsp soy sauce
  • 1 tsp dried oregano
  • 2/3 c sliced almonds
  • salt and pepper to taste

Directions

  1. Preheat oven to 325

  2. Sautee mushrooms, celery & pepper in butter in large frying pan. Mix with remaining ingredients, except almonds. Spread in greased 2 1/2 L casserole dish.

  3. Bake uncovered for 50 minutes. Sprinkle almonds on top.

  4. Bake uncovered 10-15 minutes longer.
