Ingredients
- 1 jar Bicks Cocktail Onions - sour
- 5 slices bacon, diced
- 2 lbs stewing beef, cubed
- 2 tbsp flour
- 1/2 tsp each salt & pepper
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 c baby carrots
- 1 c quartered mushrooms
- 4 c reduced sodium beef broth
- 1 can cream of mushroom soup
- 3 tbsp tomato paste
- 1 tsp each dried thyme & rosemary
Directions

Cook bacon in large skillet, until crispy & remove from pan & reserve.

Combine beef with flour, salt & pepper and brown in pan with sliced onion & garlic over medium heat. Add vegetables in cocktail onions & stir.

Meanwhile, mix beef broth, soup & tomato paste. Add to pan while stirring & scraping bottom of pan. Add thyme & rosemary and bring to a boil. Reduce heat to low, cover & simmer for 1 1/2 – 2 hours, until beef is tender.

Season with salt & pepper to taste.

Remove from heat & garnish with bacon.
