Beef Onion Stew

Ingredients

  • 1 jar Bicks Cocktail Onions - sour
  • 5 slices bacon, diced
  • 2 lbs stewing beef, cubed
  • 2 tbsp flour
  • 1/2 tsp each salt & pepper
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 c baby carrots
  • 1 c quartered mushrooms
  • 4 c reduced sodium beef broth
  • 1 can cream of mushroom soup
  • 3 tbsp tomato paste
  • 1 tsp each dried thyme & rosemary

Directions

  1. Cook bacon in large skillet, until crispy & remove from pan & reserve.

  2. Combine beef with flour, salt & pepper and brown in pan with sliced onion & garlic over medium heat. Add vegetables in cocktail onions & stir.

  3. Meanwhile, mix beef broth, soup & tomato paste. Add to pan while stirring & scraping bottom of pan. Add thyme & rosemary and bring to a boil. Reduce heat to low, cover & simmer for 1 1/2 – 2 hours, until beef is tender.

  4. Season with salt & pepper to taste.

  5. Remove from heat & garnish with bacon.
