Bruschetta Chicken Bake

Ingredients

  • 2 lbs boneless skinless chicken breasts, cubed
  • 1 1/4 tsp salt
  • 1 1/3 (15oz) cans diced tomatoes with juice
  • 2/3 c water
  • 1 tbsp + 1 tsp minced garlic
  • 1 1/3 boxes chicken Stove Top stuffing mix
  • 2 2/3 c shredded mozarella cheese
  • 1 tbsp + 1 tsp Italian seasoning

Directions

  1. eheat oven to 400. Spray 9×13 dish.

  2. Toss the cubed chicken with the salt in a large bowl. Place the chicken in a layer into the bottom of baking dish. Stir together tomatoes, water, garlic and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the italian seasoning. Spread the softened stuffing mixture on top.

  3. Bake uncovered until the chicken cubes have turned white and are no longer pink in the centre, about 30 minutes.
