Chicken Bolognaise

Ingredients

  • 1 tbsp vegetable oil
  • 3 skinless boneless chicken breasts cut into 1" cubes
  • 1 white onion chopped
  • 2 cloves of garlic, finely chopped
  • 1 (28 oz) can peeled & crushed tomatoes
  • 4 button mushrooms, chopped
  • 1/2 tsp white sugar
  • 1/2 tsp Italian seasoning
  • 4 c uncooked rotini pasta
  • 1/4 c grated Parmeasan cheese for topping

Directions

  1. Heat oil in a large skillet over medium heat. Add chicken, onion & garlic; saute until chicken is mostly cooked through, about 10 minutes. Stir in the crushed tomatoes, mushrooms and Italian seasoning. Cook for about 5 minutes, stirring frequently.

  2. Reduce heat and stir in the sugar. Simmer for at least 15 minutes. Meanwhile, bring a large pot of lightly salted water to a boil; add rotini pasta and cook until al dente. Drain and serve topped with the chicken mixture and grated Parmesean cheese.
