Chicken & Rice Skillet

Ingredients

  • 8 boneless skinless chicken breasts
  • 1/4 c olive oil
  • 4 celery ribs, chopped
  • 8 green onions, thinly sliced
  • 1 c chopped sweet red pepper
  • 1 c chopped sweet yellow pepper
  • 4 c frozen green beans, thawed
  • 2 (4.5oz) jars sliced mushrooms, drained
  • 2 (14.5oz) cans chicken broth
  • 1/2 c water
  • 6 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 4 c uncooked instant rice

Directions

  1. In a large skillet over medium heat, brown chicken in oil for about 4 minutes on each slide or until almost tender. Add celery, onions, and peppers; cook until vegetables are crisp – tender. Stir in beans & mushrooms; cook until chicken juices run clear.

  2. Stir in the broth, water and seasonings. Bring to a boil. Stir in rice; cover and remove from the heat. Let stand for 5 minutes or until rice is tender; fluff rice with a fork,
