Ingredients
- 8 boneless skinless chicken breasts
- 1/4 c olive oil
- 4 celery ribs, chopped
- 8 green onions, thinly sliced
- 1 c chopped sweet red pepper
- 1 c chopped sweet yellow pepper
- 4 c frozen green beans, thawed
- 2 (4.5oz) jars sliced mushrooms, drained
- 2 (14.5oz) cans chicken broth
- 1/2 c water
- 6 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- 4 c uncooked instant rice

In a large skillet over medium heat, brown chicken in oil for about 4 minutes on each slide or until almost tender. Add celery, onions, and peppers; cook until vegetables are crisp – tender. Stir in beans & mushrooms; cook until chicken juices run clear.

Stir in the broth, water and seasonings. Bring to a boil. Stir in rice; cover and remove from the heat. Let stand for 5 minutes or until rice is tender; fluff rice with a fork,
