Banana Butterscotch Muffins

Ingredients

  • 3 very ripe bananas
  • 1/2 c vegetable oil
  • 2 eggs
  • 1 c all purpose flour
  • 1/2 c super fine sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 c butterscotch chips

Directions

  1. eheat oven to 400. Line standard muffin tin with muffin cups.

  2. Mash bananas and set aside.

  3. Put flour, sugar, baking soda and baking powder into a large bowl and mix in egg and oil mixture; followed by the mashed bananas.

  4. Fold in butterscotch chips and place equal quantities in the prepared muffin tin. (Tip: Try an ice cream scoop and a spatula) and bake for 20 minutes.
