Pasta with Tomato and Bacon Sauce

Ingredients

  • * 1/2 pound of bacon, chopped
  • * 1 onion, chopped finely
  • * 8 cloves of garlic, thinly sliced
  • * 1 large can of crushed tomatoes
  • * 2 sprigs of fresh rosemary, minced
  • * Salt and pepper
  • * 1 box (600 g) farfelle, penne or spaghetti pasta

Directions

  1. 1. Brown bacon in a large saucepan. Add onion and sauté until they soften and begin to caramelize, about 3 minutes. Add garlic and continue to sauté for a few more minutes. Pour in tomatoes and a splash of water. Add rosemary and season with salt and pepper. Simmer for 1 hour.

  2. 2. Bring a large pot of water over high heat and bring to a boil. Add a liberal amount of salt and when it comes back to a rolling boil, add pasta. It is done when just tender to the bite. Drain the pasta, but do not rinse.

  3. 3. Add pasta to the finished sauce, adjust seasoning, toss and serve.
