Coconut Pie

Ingredients

  • 1 pie shell
  • 3 c milk
  • 2/3 c white sugar
  • 4 egg yolks, beaten
  • 1/4 c cornstarch
  • 2 tbsp butter, softened
  • 1/2 tsp salt
  • 4 tbsp vanilla
  • 1 c shredded coconut

Directions

  1. In a large saucepan, combine sugar, cornstarch & salt. Mix well then slowly whisk in milk & egg yolks. Cook over medium heat stirring constantly, until mixture thickens & boils. Boil and stir 1 minute. Remove from heat.

  2. Stir butter & vanilla into mixture. Add shredded coconut and mix thoroughly. Pour immediately into pie shell.

  3. Chill at least 2 hours before serving.

  4. Garnish with whipped cream.
