Ingredients
- 1 pie shell
- 3 c milk
- 2/3 c white sugar
- 4 egg yolks, beaten
- 1/4 c cornstarch
- 2 tbsp butter, softened
- 1/2 tsp salt
- 4 tbsp vanilla
- 1 c shredded coconut
Directions

In a large saucepan, combine sugar, cornstarch & salt. Mix well then slowly whisk in milk & egg yolks. Cook over medium heat stirring constantly, until mixture thickens & boils. Boil and stir 1 minute. Remove from heat.

Stir butter & vanilla into mixture. Add shredded coconut and mix thoroughly. Pour immediately into pie shell.

Chill at least 2 hours before serving.

Garnish with whipped cream.
