Italian Lentil Soup

Ingredients

  • 1 large onion, diced
  • 4 cloves garlic, chopped or pressed
  • 1 can diced tomatoes
  • 3 cups stock
  • 1 can water
  • 1 cup lentils
  • 1 potato, chopped
  • parmesan rind
  • bay leaf

Directions

  1. Saute onion and garlic for 2-3 minutes

  2. Add tomatoes (do not drain) and potato and saute for a minute

  3. Add the remaining ingredients, bring soup to a boil

  4. Simmer for 1-3 hours
