Ingredients
- 1 large onion, diced
- 4 cloves garlic, chopped or pressed
- 1 can diced tomatoes
- 3 cups stock
- 1 can water
- 1 cup lentils
- 1 potato, chopped
- parmesan rind
- bay leaf
Directions

Saute onion and garlic for 2-3 minutes

Add tomatoes (do not drain) and potato and saute for a minute

Add the remaining ingredients, bring soup to a boil

Simmer for 1-3 hours
