Sponge cake (all in one)

Simple, reliable sponge mixture. Adapt for apple cake by baking in one tin and, pressing apple slices into the top, and sprinkling with cinnamon sugar.

Serves 6 people
Ingredients
- 110g plain flour
- 2 tsp baking powder
- 110g butter, soft
- 110g sugar
- 2 eggs, large
- 2-3 drops vanilla essence

Beat everything together. Make sure sugar has dissolved. Mixture should drop easily off a wooden spoon when tapped on edge of mixing bowl; if not then add 1 or 2 teaspoons of warm water.

Bake in two 18cm tins (greased and lined) at 170°C for about 30 minutes. Cool for 30 seconds and remove from tin, cool on wire rack.

Sandwich with jam when cold.
